Turkey and Spinach Meatballs

1 lb ground turkey
1 tsp each:
salt
red pepper flakes
onion powder
black pepper
1 egg
1/2 onion, chopped
2 cups chopped fresh spinach
1/3 cup flax meal
1 tbsp garlic, minced
1/8 cup sun-dried tomatoes, chopped


Heat oven to 400. Mix all ingredients in a large bowl and let sit at least 15 minutes. Place a wire cooling rack on top of a sheet pan and spray with cooking spray. Roll out meatballs, about 1 inch, and place on cooling rack. Cook 10-15 minutes, then flip them over and cook another 5-8 minutes. Serve with marinara on spaghetti squash.

This was so good. I did alter it a little to also make turkey burgers. I left out the sun dried tomatoes because we didn't have any. It was still really good. They even held up on the grill. Josh ate them on whole wheat bread, and I ate mine on a bed of spinach leaves and tomato.
