1/4 cup balsamic vinegar
1 tbsp dijon mustard
2 tbsp minced chives
salt and pepper
1/2 cup olive oil
Whisk the first four ingredients together, then slowly whisk in olive oil. You can substitute chives for any fresh herb you like and can also switch the balsamic vinegar for apple cider vinegar.
