2-3 cups spaghetti squash
1/2 onion, sliced
1 jar roasted red peppers1/2 cup broth
1/8 cup feta cheese
salt and pepperHeat a small sauce pan to medium-high and mist with cooking spray. Add onions and roasted red peppers and saute 3-4 minutes. Pour in broth and cook another 5 minutes. Put into a blender and add feta cheese. Puree until smooth, then season to taste with salt and/or pepper. Serve over spaghetti squash.
